Avocado Ice-cream

From Coles Magazine

3 (about 750g) ripe avocados
2tbsp lemon juice
395g can condensed milk
270g can coconut milk
1tbsp vanilla extract
2tbsp chopped pistachies

How to do it
1. Halve and remove seeds from the avocados. Scoop the flesh into a food processor. Add the lemon juice and process unitill smooth. Add the condensed milk, coconut milk and vanilla extract, and process untill combined.
2. Transfer to an aritight container. Cover tightly and freeze, stirring occasionally os it freezes evenly, for 3 hours or untill almost frozen.
3. Speeon into a clean food processor and process until smooth. Reture to the container sleghtly before scooping into bowls. Serve sprinkled with pistachios.
