It’s no wonder cauliflower resembles a dense, whitte broccoli is brigh green, cauliflower stays creamy white becasue its long, green leaves cover the florets while the plant is growing, shelding them form sunligh and preventing the development of chlorophyll. Cauliflower can be eaten raw or cooked- both the stems and flores can be used in dishes and its tender inner leaves are also edible. Cauliflower is a good source of vitamin C. Look for cauliflower that is dense and heavy, with a firm stem. store unwashed cauliflower in the fridge for up to a week.
