Shallots and onions belong to the allum family, but they’re actually separate species and not interchangeable in cooking. while onions form the base of many recipes, shallots contribute to the flavour of classics from French shallots and red wine sauce to indonesian nasi goreng. It’s said that shallots can cause more tears than a broken romance, and it’s truel when cut, the sulphur compounds sisperse and react with the saline in our eyes- to lessen the effect, cut shallots carefully with a very sharp kife on a damp chopping board. Store whole shallots in a cool drey place for several weeks, or peel, chop and freeze in an airtight container for up to 3 months.
